Easy Shrimp Dumpling Soup

With the hustle and bustle of life it is sometimes ok to take some short cuts! Especially when it comes to a weeknight meal. I love to stock up on some frozen goodies at Costco from time to time. This last trip I bought some cilantro and chicken dumplings that caught my eye, along with frozen shrimp that I can use for lots of different recipes. I had been using them for quick appetizers by searing them on the stove top, but I was dying to try them in a soup. I gathered some inspiration from Pinterest and heres what I came up with....

What you'll need:

Ginger

Garlic

Cilantro for garnish

Green Onions

Swiss Chard

1 package of Assorted gourmet mushrooms

7 cups of organic chicken stock

1 Carrot- thinly sliced

Frozen Shrimp (as many as desired)

Sesame oil

Soy Sauce

Step 1

Chop your garlic and grate your ginger. (hint: use the back to the soup to remove ginger skin) Add both to a oiled pan on low heat. Wait until the aromas fill the air and the color starts to slightly brown.

Step 2

Next add the chicken stock to the garlic and ginger. Include the carrots since they will take the longest to cook of the veggies. Let this simmer for about 10 minutes.

Step 3

Add in the frozen shrimp and dumplings. You can turn up the heat to medium depending on the size of your dumplings and shrimp. Stir from time to time for about 10 more minutes.

Step 4

Add in the mushrooms, swiss chard and some of the green onions (save some for garnish). Mix in a dash of soy sauce. Let this all sit together for about another 8 minutes.

Step 5

Serve into bowls adding the cilantro, green onion and a few sprinkles of sesame oil to the top before bringing to the table.
